Lord of the Hundreds, The Traditional Cheese Dairy (300g)

The cheesemakers at The Traditional Dairy tinkered with the original recipe for the Lord of the Hundreds for several years, making many alterations to improve taste, texture and consistency. The result is a modern, hard sheep's cheese which is ladled into baskets and is left unpressed, giving it an open texture and a unique shape. The cheese is rubbed and shaped every other day during the six to eight month maturation period, distributing the moulds evenly and encouraging a light grey crust to develop.

The resulting taste is sweet and nutty with a mellow afterbite.

The Traditional Cheese Dairy is based in Stonegate, East Sussex and uses raw grass-fed milk from neighbouring Lulling's Farm in Cuckfield for this excellent cheddar.  A family run business, they have been refining and adapting traditional cheesemaking methods to produce their fabulous selection since they started their business in 2002.

Lord of the Hundreds is unpasteurised and vegetarian.
